What is Mandugwa (만두과)?
Mandugwa is a traditional Korean confection inspired by the shape of mandu, or dumplings.
Though it may look like a savory dumpling, it is actually a sweet treat—made by wrapping a thin dough of glutinous rice flour or wheat flour around a filling, then deep-frying it and coating it with syrup.

It’s a rare and luxurious sweet—even many Koreans today have never tasted or heard of it.
I learned this precious recipe directly in Korea, and I’m excited to share it through this class.
Despite being deep-fried and syrup-coated, the flavor is surprisingly light and refreshing, thanks to the fragrant yuzu filling.
